Healthy fats are primarily monounsaturated and polyunsaturated fats. They differ from harmful saturated fats by the presence of double bonds in the carbon chain. Some of them are considered necessary to maintain the proper functions of the body, and since they cannot be synthesized by humans, they are referred to as Essential Fatty Acids (EFAs).
